They are both important but for different reasons. If you are interested in having a career in sciences or medicine then science would be more relevant to study in school. However if you are interested in English, history or languages for example then Latin is probably a more relevant subject. Having said this although science is required for entrance into most medical courses, Latin can be very helpful in understanding a lot of the medical terminology.
Science (as Duncan points out, the word is derived from the Latin equivalent) is more important if you already know a language (which seems to be the case). But knowing Latin (and Greek) will help you understand science better because most of the words used to describe scientific concepts have their roots in either of these two languages. And appreciating the similarities and differences between Latin and English will give you a hint as to how varied languages can be. Knowing that they both form part of the same superfamily of languages (the Indoeuropean one) and that there are several such superfamilies around (though their exact scope is subject to debate), may incite you to start dreaming of doing some research on the biology of language, one of the most fascinating research topics for me. And there, you are back in science, oops.
